What is the correct way to type -- 2-dimensional, 2 dimensional or two dimensional, two-dimensional?? What is acceptable?

Yes like the previous comment, they all can be correct. I personally type out numbers ten and below in full, ie: one, two, three and then numbers 11 and above as numericals, 11, 12, 13, etc. But one client of mine wants these numbers as numerical on his work, everyone else wants it my way.

So it's up to you or it's up to your client's requirements and preferences. I'm not so sure on the hyphen usage for some instances, that confuses me sometimes. I personally tend not to use hyphens, but that's just me. No client has ever brought lack of hyphen usage to my attention. LOL.
